Cheddar Biscuits Recipe with Kefir!

If you’re looking for something delicious to serve alongside a seafood feast or your favorite soup, these cheddar biscuits are always a good idea. They’re crispy on the outside and soft and fluffy in the middle. Plus you make them with lovely things like raw, sharp cheddar cheese, whole milk kefir, butter, and paprika.

Let me show you how to make them in your own kitchen!

Here’s everything you’ll need to make them: Flour, butter, parsley, kefir, sugar, paprika, baking powder, baking soda, garlic powder, salt, pepper, and sharp cheddar cheese.

Let’s pause a moment and talk about Kefir:

I don’t want to knock other fermented dairy products (hallelujah for sour cream!), but Kefir really is a powerhouse of good bacteria. How to Make Cheddar Biscuits:

First, place all of the dry ingredients in a food processor and pulse until well combined.

Next, toss the butter on top of the dry ingredients.

Pulse until the mixture looks like coarse sand.

Add the shredded cheese and parsley and toss in the dry ingredients.

Transfer the dough to a parchment lined work surface. Knead a few times to evenly moisten the dough. Pat out to a 7×8-inch rectangle.

Slice the biscuits into 16 squares. I know. Your mind was just blown with the idea of cutting biscuits into squares. No need to re-roll the dough!

Bake in a 400°F oven for 25-30 minutes, or until the biscuits are golden and cooked all the way through. You can slice into a biscuit to check for doneness.

Lastly, brush the tops of the biscuits with melted butter if desired.

NOTES:

  • These are most heavenly if you serve them fresh from the oven, but they reheat nicely as well. You can sprinkle them with water and place in a 350°F oven, or slice them in half and warm them in the toaster.
  • Try substituting chives for the parsley!
  • If you like your cheddar biscuits a little bit spicy, add a dash of cayenne pepper.

  • 2 1/4 cups organic all-purpose flour (330 grams)
  • 1 tbsp organic cane sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp organic garlic powder
  • 1 tsp organic paprika
  • 1 tsp freshly ground organic black pepper
  • 3/4 tsp unrefined sea salt
  • 8 ounces raw sharp cheddar cheese, shredded
  • 3 tbsp finely chopped fresh parsley
  • 1/2 cup grass-fed butter (1 stick/8 tablespoons)
  • 1 cup Kalona SuperNatural whole milk plain kefir
  • 2 tbsp butter, melted, optional

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper and set aside.

  2. Place the flour, sugar, baking powder, baking soda, garlic powder, paprika, pepper, and salt in a food processor. Pulse until well combined. Add the butter and pulse until the mixture looks like coarse sand.

  3. Transfer to a large mixing bowl. Add the cheese and parsley and toss to coat in the dry ingredients. Pour in the kefir and mix briefly to form a shaggy dough.

  4. Transfer the dough to a parchment-lined work surface. Knead the dough gently a few times to evenly moisten the dough. Pat out to a 7x8-inch rectangle. Slice the dough into 16 biscuits.

  5. Place the biscuits on the prepared baking sheet. Bake in preheated oven for 25-30 minutes (checking at the 20 minute mark) until the biscuits are golden and done all the way through. You can check to see if a biscuit is done by slicing one in half.

  6. Transfer to a cooling rack to cool until warm (or just until they won't burn your mouth). Serve immediately.
